Staying cool while enjoying the harvest – homemade ice cream with fresh berries

Homemade ice cream is SO easy to make with an ice cream machine. I don’t know why I don’t make it more often. Maybe it’s the fear of then having to eat it all! :) But seriously, if you use a no-cook recipe for ice cream, throwing the ingredients together and pouring them in the machine takes no time at all. Then let it do the hard work for you while you take care of other business.

If you’re blessed with a great harvest of fresh strawberries, raspberries, gooseberries and currants like we’ve been, you need something to go along with them for a quick, simple desert. I can’t wait for the apricots, peaches and plums to ripen, though. I’m dying for some more cloufouti! (Wait, did I spell that right?)

Easy No-Cook Vanilla Ice Cream

Prep Time: 45 Minutes
Ready In: 45 Minutes
Servings: 32

INGREDIENTS

  • 2 quarts half-and-half cream
  • 1/2 pint heavy cream
  • 1 1/2 cups white sugar
  • 4 teaspoons vanilla extract
  • 1 pinch salt

DIRECTIONS

  1. Combine half-and-half, cream, sugar, vanilla and salt in freezer container of ice cream maker. Freeze according to manufacturer’s instructions.

    We bought an ice cream maker last summer and had the BEST sorbet with peaches, then with strawberries. If you don’t have the recipe for this, let me know and I will send it to you…….the strawberry one is sooooooooooooo good.

      We’ve had our little ice cream maker for 5 years I guess. Haven’t used it much in the last year or two but I really don’t know why. They’re just so simple & homemade ice cream & sorbet are so much better than the store bought stuff.
      Please do send the recipe – maybe you’ve got a twist we haven’t tried yet ;)

    My ice cream maker has a frozen yogurt recipe, I sub whatever fruit it calls for with fresh (mushy) apricots, I also use about 1/2 the amount of sugar (I like things tart). It’s very tasty!

    I’ll have to try that with some of our apricots. I hope they are as flavorful as 2 years ago. I need to start making smoothies again too. It’s been so hot lately that they would be ideal to cool us off a bit after working hard outside.
