Stuffed & Roasted Farmer’s Duck
Our Christmas menu, like New Year’s, is always a bit up in the air at this time of year. Last year it was fairly easy for us to decide because we wanted a Thanksgiving-style dinner since we skipped our Thanksgiving dinner last November. We figured it would be a bit advantageous to assume I could cook all day when in fact I would probably be in labor or have just given birth to Mackenzie. This... read more

Chocolate Chocolate Chip Cookies
Stefan is a chocoholic. He may not like me mentioning it here, but it’s true. He might need to seek therapy. No, it’s not really that serious, but if there is no chocolate in the house he does get a bit edgy. So instead of making the usual chocolate chip cookies this week (in my head I bake once a week making zucchini bread and some sort of treats; reality proves otherwise but I was getting a... read more

Garlic and Honey Chicken
Lately I haven’t been that great about meal planning. I’m a bit uninspired and just have so much going on that I often don’t feel much like cooking. Usually meal planning would help me eliminate this problem because it would just tell me what to cook without hassle. But I keep wanting to try new recipes which keeps leading to more work and time required as I figure out the steps.... read more

Using up those fresh tomatoes — Pasta with Fresh Tomatoes, Garlic & Basil
There’s many things you can do with fresh tomatoes from your garden. One of my favorites is just slapping a little mayo on two slices of bread and then throwing a huge slice or two of tomato on there. When they’re really good tomatoes, you don’t even need salt. I’ve had the following recipe for years but tucked it away instead of trying it out immediately. When I discovered it a... read more

Pressed hot ham & cheese sandwiches – the ghetto way
We decided to have Media Noche the other night, but unfortunately I’m a dork and forgot to put half the ingredients in the sandwiches before we started pressing them. They still turned out awesome (partially in thanks to some REALLY good kettle chips which I’m going to tackle making soon!) You can find the recipe below. But the more important part of this post is about our DIY sandwich press.... read more

Healthy blueberry muffins
I’ve mentioned the muffin baking craze I’ve been on these past months but I’m always on the look out for recipes that are not loaded with sugar and big chunks of chocolate. Sure they taste awesome but I send them to work in the morning with Stefan and he doesn’t need to start the day off with a total sugar rush that is going to leave him crashing an hour later. I came across this... read more

Ultimate comfort food – Chicken & gravy with biscuits
Comfort food. There’s something special about it and everyone has their own special somethings that can just make the darkest days seem bright. We could have used a bit more comfort food around here the last few days. And now that Stefan is finally home again and getting back to a healthy state, he needs plenty of home-cooked to get him back on his feet. Hospital food barely qualifies as edible.... read more

Biscuits fit for a Southern kitchen
When I was growing up, I can recall many a weekend morning sitting down with biscuits, jam, butter and a big glass of ice cold milk. There’s just something really awesome about a good biscuit. The texture, the flavor of the biscuit itself with a little butter, the jam peaking over the edges ready to escape: YUM! If you’re as lucky as we are to have lots of friends and family who enjoy making... read more

Now that’s good lasagna
As I mentioned in my little meal planning schedule last week, we tried a lasagna recipe from The Harley Biker’s Cookbook and it was SO good. I didn’t get to follow the recipe exactly because I didn’t have any Italian sausage or ricotta (I used ground beef and cottage cheese instead for a super protein kick) but the base of this recipe will stay with us for a long while. The sauce part... read more

Ham & Cheese Breakfast Muffins
I’ve been trying to come up with new and interesting things for Stefan to take to work for breakfast, and for us to have on the weekends before we start on our projects. I thought these might be an good change from the fruit based muffins and breads I have been making the last few weeks. Unfortunately they’re not as appetizing cold as they are warm, so these will be weekend only muffins. I... read more
