Grillades with Leftover Steak

Ingredients

  • pound Roughly 1leftover steak (cut into strips)
  • 2 1/2 teaspoons Cajun seasoning mix
  • 2 tablespoons extra virgin olive oil
  • 2 large white onions (coarsely chopped)
  • 1 green pepper (julienned)
  • 2 stalks celery (minced)
  • 3 cloves garlic (crushed)
  • 2 tablespoons flour
  • 2 cups beef broth
  • 2/3 cup red wine
  • 1/4 cup fresh parsley (minced)
  • 1 teaspoon Tabasco
  • 1 Tablespoon Worcestershire sauce

Instructions

  1. Set the oil on medium heat. Add the onions, bell pepper, celery and garlic, and sauté for about 5 minutes.
  2. Stir in the flour evenly with the vegetables. Heat for another 3 minutes, stirring continuously.
  3. Pour in the beef broth and continue stirring. When the mixture is smooth, add the steak strips and Cajun Seasoning. Cover, then reduce heat to a low simmer and let it cook for 1 hour.
  4. Add the wine, Tabasco and Worcestershire, and stir. Cover again and let the mixture cook for forty more minutes.
  5. Stir in the parsley and add thickener if needed.
  6. Serve over white rice or grits.
