Quick & easy potato soup

Ingredients

  • 3 tablespoons butter
  • 1 large onion, chopped
  • 4 stalks celery, sliced
  • 5 pounds potatoes, peeled and cut into 1-inch cubes
  • Water to cover
  • 1 teaspoon salt
  • 2 teaspoons dried parsley
  • 1 teaspoon pepper
  • 1 1/2 cups milk or cream

Instructions

  1. Melt butter in a large pot. Saute onions and celery until tender.
  2. Add potatoes and just barely cover with water. Bring to a boil, lower heat and simmer for 20-25 minutes, until the potatoes are tender. Do not drain.
  3. Stir in the salt, thyme, parsley and pepper. Gradually add milk. Bring to a boil. Cook, stirring for 2 minutes.
  4. Using a blender or puree stick, puree the soup (in multiple batches if necessary) until desired smoothness is reached.
  5. Heat through and serve hot with warm bread and a fresh salad. Top with cheese and bacon bits if desired.
