  • 1/2 cup fresh pumpkin seeds, rinsed
  • 2 cups water
  • 1/2 teaspoon salt
  • Olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small saucepan, add water, salt and seeds. Bring to a boil, then simmer for 10 minutes.
  3. Remove from heat and drain.
  4. Lightly coat the bottom of a roasting pan with olive oil. Spread the seeds out in a single layer across the pan. Bake on the middle rack until the seeds begin to brown (and start smelling a bit like popcorn), about 10-20 minutes.
  5. Remove from oven and let cool completely before eating. Crack to remove inner seed or eat whole.
  6. Store in an open bowl on your kitchen counter (until they are devoured). This will ensure they maintain their crunch.
