Succulent Barbecue Ribs in the Oven – Romertopf

Finger licking good ribs made in a Romertopf clay pot inside your oven. By the time these are done cooking. you will be beyond hungry.

Ingredients

Units Scale
  • 4 ears of corn (husked & cut into thirds)
  • 1-2 small onions (peeled and quartered)
  • 3 big handfuls of baby carrots or 4-5 carrots cut into thick slices,
  • Salt & pepper to taste
  • 1 can of beer
  • 2.5-3 lbs pork ribs,
  • 1/4 c spicy brown or yellow mustard
  • dry rib rub seasoning
  • 2 cups of your favorite BBQ sauce

Instructions

  • Place onions, corn and carrots in bottom of Römertopf or terracotta baker. Add salt and fresh ground pepper to taste and beer.
  • Remove fatty membrane on back of ribs. Coat ribs with mustard and then sprinkle with rib rub, coating generously. Add ribs to Romertopf. Cover with clay pot lid.
  • Place Römertopf in oven and heat to 400°F. Cook covered for 2-3 hours. Check after 1 1/2 hours and add BBQ sauce. Cook until ribs are no longer pink inside.

Wrap leftovers:

  1. Strip meat from bones.
  2. Slice potatoes into bite-size pieces. Heat in microwave or pan.
  3. Warm tortilla. Place meat, potatoes, carrots, onions and salad into tortilla. Top with a bit of spicy Thai sauce.
