Finger licking good ribs made in a Romertopf clay pot inside your oven. By the time these are done cooking. you will be beyond hungry.

4 ears of corn (husked & cut into thirds)
1-2 small onions (peeled and quartered)
3 big handfuls of baby carrots or 4-5 carrots cut into thick slices,
Salt & pepper to taste
1 can of beer
2.5-3lbspork ribs,
1/4cspicy brown or yellow mustard
dry rib rub seasoning
2cups of your favorite BBQ sauce
Instructions
Place onions, corn and carrots in bottom of Römertopf or terracotta baker. Add salt and fresh ground pepper to taste and beer.
Remove fatty membrane on back of ribs. Coat ribs with mustard and then sprinkle with rib rub, coating generously. Add ribs to Romertopf. Cover with clay pot lid.
Place Römertopf in oven and heat to 400°F. Cook covered for 2-3 hours. Check after 1 1/2 hours and add BBQ sauce. Cook until ribs are no longer pink inside.
Wrap leftovers:
Strip meat from bones.
Slice potatoes into bite-size pieces. Heat in microwave or pan.
Warm tortilla. Place meat, potatoes, carrots, onions and salad into tortilla. Top with a bit of spicy Thai sauce.
