Ingredients

Units Scale
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2.5 pounds chicken wings (about 15 whole or 30 halved)

Wing Sauce

  • 1/3 cup Louisiana hot sauce (or your favorite)
  • 1/3 cup margarine (not butter!)
  • 4 teaspoons white vinegar
  • 1/8 teaspoon celery salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1 dash black pepper
  • 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon Tabasco sauce
  • Carrots & celery with blue cheese dressing, for serving

Instructions

  1. Line a baking sheet with foil and lightly grease. Shake flour, cayenne, garlic powder and salt in a zip-top bag. Add wings, seal and toss to coat. Arrange on the sheet and refrigerate at least 1 hour.
  2. Preheat oven to 400°F (200°C). Bake until crispy and no longer pink inside, about 45 minutes, turning halfway.
  3. Whisk the sauce ingredients in a small saucepan over low heat until the margarine melts.
  4. Toss the wings with the sauce in a large lidded bowl or bag. Serve with carrot and celery sticks and blue cheese dressing.
