Pumpkin Bread with Chocolate Chips
Pumpkin bread is a delicious, moist treat which is easy to make and can be kicked up a notch by adding your favorites like nuts or chocolate chips. It’s a great way to use up your canned or freshly pureed pumpkin.

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9×5 inch loaf pans. (This is a sticky bread so grease them well!) Or grease the tops of muffin pans and line with muffin cups.
  2. In a large bowl, mix together the pumpkin, oil, sugar, and eggs. Combine the flour, baking powder, baking soda, salt, cinnamon and nutmeg; stir into the pumpkin mixture until well blended. Add nuts or chocolate chips if desired. Divide the batter evenly between the prepared pans.
  3. Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed and a toothpick should come out clean when inserted into the center of the loaf.
