When we first got this You Capture challenge, my first instinct was to go to the market. But as it turns out, we have a ton of fruit at home already.
Fruit is always in very high demand in our house…and winter is no exception, although Mackenzie is more of a fresh berry fan than anything else. So we’re in a transition phase. Bananas are still a hit but she’s just not convinced about tangerines (I think it’s the fear of finding a seed which she really doesn’t like), only has a taste for apples on occasion (and in baked things which I can definitely understand) and mangoes.
And with us running 3-4 times a week, fruit is a great way to get some quick healthy carbs and sometimes even reduce inflammation after a run. Berries and grapes are excellent at that, actually. And there’s plenty of other fruits, like bananas, pineapple, oranges and others which are not only great to provide glucose to our bodies (which they crave) but get some fiber. Studies show that most Americans consume about 5g of fiber per day; while we’re supposed to get about 50g! So maybe it’s time to add fruit back into your diet if you’ve been avoiding it.

The apples my in-laws brought a few weeks ago are in dire need of being eaten. Throw me your favorite apple recipes, people! I have to process them soon and preferably without too much hassle. π
Pineapples are popping up everywhere right now. In fact, we would have had two more to bring home with us on Saturday, if we’d realized we had actually placed in the cross country race we participated in. Live and learn (and more to come about that event too!)

Our house presently has apples, bananas, mangoes, and if we go to the Asian Market today we will probably grab a few persimmons, my Japanese wife’s favorite.
No better way of using up aging apples than frying them. I like to cut them into seeded wedges, leaving the peeling on, and fry them in a little butter with some added brown sugar and a dash of cinnamon. Cook them with a lid on the pan so they steam themselves tender. Crisp and tart apples are the best but almost any will do. Great accompaniment to pork or cured ham.

It’s the beginning of Clementine season where we are. I love them. Easy to peel, very few seeds, and sweet, sweet goodness! Makes regular old oranges seem downright dull. =>
We love them too! I just bought a couple of kilos for 6 euros the other day. They are some of the best ever. π
