I have created a meal plan for the next couple weeks…but I haven’t set anything to actual days yet…just found a bunch of recipes that sounded interesting and bought things for them. And then I select a recipe based on what needs to be eaten out of the fridge first. Not as easy as just looking at a piece of paper that’s more or less decided everything for me…but it’s working.
So here are the recipes…Most of them are from Rachel Ray. I was on her site and got inspired. I’ll post more about them once we’ve experienced them…I’m hoping to get several leftovers meals and perhaps a few double portions to freeze as well. Not sure how much I’ll want to be cooking when I could be holding Mack instead! 😉

Oh good! Thought I was the only one. lol Sometimes things just don’t seem appetizing in the morning when you’re setting things out to thaw…or my husband makes a special request.
I do the same thing. I make a “rough” menu and buy the things I need to make those meals but I don’t generally have set days for when I make what. I make what I am in the mood for and cross it off. The only exception is dessert night is Wednesday pretty much with fail. It stops the kids begging for dessert on other days, and keeps me out of the Ben and Jerry’s on other days. I know I have something special to look forward to once a week. Last night was sopapillas ’cause this Texas girl was feeling homesick!

I really like the dessert once a week idea. Might have to try that out here too. Of course I would imagine it lasts a bit longer than just the one night if you make a pie or cake too. That’s always the trouble here since there are only two of us. But I’m sure Mackenzie will be helping us out soon 🙂
Sopapillas! I’m SO jealous. I have been talking about them for a while now. One of my favorite food blogs, Homesick Texan, talked about them recently and I was jabbering about them to my husband…who just looked at me like sopa-whats??
I didn’t realize you are also from Texas! I was born in Houston and lived there until I was about 15. Texas will always be home to me. My husband and I debate between Florida and Texas when we think about where we’d like to live when we move back to the States. Both have their benefits! 🙂
